Anniversaries are notoriously difficult, because it really depends on your tastes. Sit down, and talk with your husband about the sort of anniversary he wants to have. If you want a blast of youthful exuberance and he's the outdoorsy type, Torrey Pines and the La Jolla area offer up great places to hike, kayak, and spend time under the sun. Less demanding activities include a romantic dinner on Coronado, or a pleasant evening together in one of the Gaslamp's finer restaurants. For something a little different, try a dinner cruise on the Hornblower.
Living in La Jolla I might be a bit biased, but for me we have the best beaches! I especially like La Jolla Shores, the water stays shallow really far out, so it gets warmer than most other places down the coast.
hhhmmm. Yes, that would be a problem for me too! Although I am not sure I would condemn all Fairmonts over the one esthetician. I would try the Ritz though if you want to stay away or maybe a boutique spa that really has a lot riding on their reputation. That way you know they will go above and beyond.
It kind of depends. Most luxury hotels have great spas. I love both Fairmont and Ritz-Carlton spas myself. Just make sure they have a large space offering places to relax, saunas, steam rooms etc. Enjoy!
