Sweet Basil is synonymous with fine dining in Vail. With a picturesque river view dining area, in-house baked goods and breads, and food as stunning in presentation as in flavor, the legendary restaurant has been a staple of Vail for over 35 years. The creators of Sweet Basil are bringing what is sure to be a new wave of culinary excellence with a relaxed tavern atmosphere with their new concept Mountain Standard, slated to open December of this year.

Pulling from the most basic cooking methods, over an open fire, the central open-flame wood grill and rotisserie will be the centerpiece of the new restaurant. Utilizing fresh and pure Rocky Mountain ingredients, the dining experience at Mountain Standard will certainly be one to remember.

“You get pure flavor when cooking over fire,” explains Chef Brouillard who will head up the kitchen at Mountain Standard, “We plan to offer menu selections that are simply prepared – sometimes with only three or four ingredients. We plan to keep the menu simple and straight forward which is really the way I love to cook.”

Everything from fresh fish and local vegetables in the dining area to a unique cocktail and beer program in the 20-seat bar bring exciting promises to foodies and aficionados alike with the upcoming opening. Lunch, après and dinner will be offered at the new restaurant and reservations can be made at www.mtnstandard.com.
