The French Culinary Institute (The FCI), located at the International Culinary Center in New York City, teaches the protocol, language and techniques upon which all Western cuisine is based. The FCI offers a rigorous six-month program by day and nine-month program by night for those who seek quality, intensive culinary, pastry arts and bread baking education in a condensed period of time.

The FCI does not offer your usual William & Sonoma night class. Instead they offer courses that are for the true food aficionado, and each course is designed to offer the most comprehensive lessons on cuisine. From learning to select that perfect bottle of wine to compliment your meal, to mastering culinary techniques, these courses are for the passionate food lover, looking for more than just a hobby.

Food and Wine Pairing $995

Can a well-chosen wine really elevate the flavor of a meal? What's the difference between an "oaky", "earthy", and "buttery" wine - and with what foods should each be paired ? These are just a few of the questions that will be answered in Food and Wine Pairing, created by The French Culinary Institute's Dean of Wine Studies, Master Sommelier Andrea Robinson. Total of six classes.

Chocolate Truffles, Bonbons and More $950

Chocolate lovers will be in heaven with this intensive course that teaches how to create gourmet chocolate and mold it into candies of your own original design. You will get access to the same modern facilities and distinguished Chef Instructors that have made The French Culinary Institute one of the world leaders in culinary education in a short class that's easy to find time for. Total of five classes.

Essential of Fine Cooking $2345

Whether you're a confident cook or a total neophyte, Essentials of Fine Cooking will help you become a star in your own kitchen in just eight sessions. You'll learn everything from how to deftly slice an onion or gently poach a fish to creating 25 classic recipes, and you'll love the entire experience. Lessons are as fun as they are intense, and you'll find yourself picking up new techniques, skills, and recipes faster than you ever thought possible. Classes are small - reserve your place now! Total of eight classes.

Culinary Techniques $6875

Rated best cooking classes for seasoned amateurs by New York magazine, these 22 classes will give you the skills and confidence to whip up truly outstanding meals at home. You'll spend 110 hours in classes that are fast paced, hands-on, and taught by the same distinguished and passionate Chef-Instructors that teach our career students while working at the very same workstations and kitchens. Kitchen terminology will become your second language, precision knife work your trusted new skill.

By the end of the course, you'll be able to create sophisticated multi-course menus, recognize and evaluate classic food pairings, correctly assess seasonings and flavors, and more. And you can do it all when it fits your schedule. Total of twenty-two classes.
