Food & Spirits: Eggs aren’t just for breakfast anymore, according to Trend Central. The incredible edible traditional morning food is showing up in liquid form at some of the hottest bars in the nation.
Whipped egg whites have a foamy texture just right for fruit-filled creative drinks, as mixologists at the swankiest bars around the country have found out.
At the top of the list is Michael Biancaniello's “Humpty Dumpty” at Library Bar in the celebrity hangout Roosevelt Hotel in Los Angeles. An experiment in molecular gastronomy, the cocktail is set to feature egg whites and will be served in an ostrich egg. In the hip Silverlake area, Biancaniello is said to be working on an emu egg cocktail holder for Bar Keeper.
Farther north on the west coast, mixologist David Nelson is using whipped egg whites in classic cocktails at the speakeasy-inspired Tavern Law in Seattle.
On the east coast, head across the bridge to Brooklyn’s Hotel Delmano and order a “Rattlesnake,” a concoction of rye, absinthe, lemon juice and egg whites.
If you’re worried about salmonella, Trend Central reports that experts say that the potent combination of alcohol and acid should kill any bugs. Just to be on the safe side, home party-ers wanting to get in on the new trend should use pasteurized whites or fresh organic eggs.
