Award-Winning François Adamski is Air France’s Next Star Chef With New Business Class Menu

Meilleur Ouvrier de France and Bocuse d’Or winner François Adamski is bringing his culinary genius to Air France’s Business Class fliers. The airline has dedicated itself to promoting French haute cuisine in its cabins and has chosen several star chefs to be French gastronomy ambassadors, including Joël Robuchonn and Guy Martin. As a newcomer to the airline, “Adamski has concocted six delicious dishes on the in-flight menu, available alternately on the long and medium-haul Business Class menus every two weeks.”

The menu additions will be available for the next six months and will feature tender roast chicken fillet with carrots, celery and a cumin suprême sauce. Chef Adamski’s use of cumin was inspired by an overseas trip and when combined with crunchy celery and tender carrots, he promises it to be “a rich gourmet dish.”

Another favorite is the lightly grilled smoked salmon with vegetable medley and creamy lemon sauce. According to the chef, the fish “can be easily adapted with the right amount of salt and smoking to obtain the perfect texture one is looking for.”

Other menu items include slow-cooked veal with truffle paste, roast duckling and cod fish fillet, and chicken tajine with vegetable semolina.
