California Pizza Kitchen is going back to its roots to upgrade the menu and the aesthetics with its new prototype in Southern Florida. Culinary and decorum are being redone. Hand-tossed-pizza making is back, front-and-center in the new layout, and the entrees are more elaborate. Why the big changes?
“As we grew, we didn’t keep up with the creativity on the menu and we tried to be all things to all people,” said Brian Sullivan, senior vice president of culinary innovation. "We don’t want items that you are going to see in other restaurants.”
