The Food Channel says the #1 trend for food in 2011 will certainly be a comeback from an old fashioned staple activity that was used by many folks back in the days of putting up food for the winter. It is now known as canning, preserving, and pickling. This food preservation has become a hit once again because a lot of folks are doing it for a number of reasons.
One of these reasons is simply people looking out for food safety. There have been scares in the past few years of food being contaminated. This has made many what to control the kinds of ingredients that are put in the foods they are eating. Another reason is many are doing it to preserve that taste of freshness; holding on to the hours of tending to their gardens and delivering that fresh new tomato and other well liked homegrown food. Probably the last reason is the struggling economy, everyone wants to save a dollar or two nowadays.
