Two weeks ago we decided our dessert menu needed a little something: mango. I've always been a huge fan of parfaits. So I started playing around with a recipe. I wanted that tropical fruit in there, and a little Greek yogurt. I knew I also wanted to keep it relatively healthy, airy, and light.
