Fresh Cranberry Relish

MAKES 5 CUPS

INGREDIENTS1 lb. fresh or thawed, frozen cranberries
1 cup fresh orange juice
¾ cup sugar
? cup fresh lemon juice
1½ tsp. ground cinnamon
1 tsp. kosher salt
½ tsp. ground black pepper
Zest of 1 orange
Zest of 1 lemon
2 sweet apples, peeled, cored, and finely shredded

INSTRUCTIONSCombine cranberries, orange juice, sugar, lemon juice, cinnamon, salt, pepper, and both zests in a food processor; pulse until berries break down. Transfer to a serving bowl; stir in apples. Chill until ready to serve.
