Meatless Monday: Quinoa Meatball Subs

Basil quinoa meatball subs from Spa Bettie are a comforting meatless meal. Cooked quinoa is paired with fresh basil, garlic, and onions and formed into balls.  The "meat" balls are baked in the oven for only 20 minutes so that they don't dry out.  Cover your quinoa balls with plenty of marinara sauce and cheese before tucking them in a soft roll.  Even though you are meat-free for a day, doesn't mean you cannot enjoy your favorite foods.  This recipe for quinoa meatball subs is the best of both worlds.
