I don't know about you, but I need a vacation. And in lieu of that, a giant coffee. This cake nicely pairs both my needs—a little coconut for a mental getaway and espresso to keep me going.
The coconut in the cake comes in three forms: cream of coconut, coconut sugar, and coconut flakes, making for a very flavorful base. In between layers, there's a tangy espresso cream. Especially if you have Monday off, this is a nice leisurely baking project. Besides, everyone gets cheered up by a layer cake. Even those of us feeling run down.
