In this week's Epicurious Cookbook spotlight, we turn to two recipes that are bound to brighten even the coldest and darkest of winter days, Southwestern-Style Chicken Soup with Barley and Dark Chocolate Cherry Oatmeal Cookies. The recipe for Southwestern-Style Chicken Soup with Barley comes from Mike Kubin, an Epicurious member since 2006. Chicken and black beans fortify this hearty weeknight dish with protein, while pearl barley, an alternative to the standard rice or pasta, delivers a healthy dose of fiber. The zesty Southwestern flavor comes from a mix of cumin, chili powder, garlic, and mild or hot green chiles (you can make the soup as spicy as you like). We recommend making a big batch and bringing leftovers for lunch. Dark chocolate, dried cherries, and rolled oats make for a winning cookie combination and we have Epicurious member alyb2022 to thank. Alyb2002 likes these cookie jar treats light and fluffy and recommends taking them out of the oven when they are just baked through.
