Vegan Gluten Free Dark Chocolate Chipotle Cake

You may wonder how Chocolate cake can be any more delicious. This Vegan and Gluten Free Chocolate Chipotle Cake recipe is not only better, it leaves plain chocolate cake in the dust. 

We absolutely LOVE the moist, rich taste and texture of this bundt cake. No one will have any idea that this cake is actually safe for anyone on a gluten free or vegan diet. What a treat!

Vegan Gluten Free Chocolate Chipotle Cake
Serves 4-6 
Gluten free, dairy free, eggless, vegan

2 cups sugar
1 1/2 cups (3 sticks) dairy free butter, melted (Earth's Balance works, or coconut oil!)
3/4 cup cocoa powder
1 1/4 cup sorghum flour
1/2 cup tapioca starch
1/2 cup cornstarch
2 tsp xantham or gaur gum
1/2 tsp salt
2 tsp gluten free baking powder
1 1/2 tsp chipotle powder
2 tsp cinnamon, ground
1/2 tsp fresh nutmeg, ground
1/2 tsp cardamom, ground
1 cup non-dairy milk (rice, coconut, almond, soy)
6 Tbsp vinegar

Note: If you'd prefer, you can easily substitute 2 - 2 1/2 cups of your favorite gluten free all-purpose flour blend for the sorghum, tapioca starch and cornstarch called for in this recipe!

Don't be put off by that special kick of the chipotle powder. We have tried with and without - both ways are delightful.
