Light and Healthy: Chimichurri Dover Sole

Chimichurri Dover sole  from Cooking on the Weekends is a light and healthy meal that is packed with flavor.  This traditional Argentinean sauce is made from a combination of parsley, garlic, olive oil, and red wine vinegar and is usually served with grilled meats.  The parsley is swapped with cilantro which gives this dish even more vibrancy.  Serve chimichurri Dover sole with brown rice and garlic green beans.  For full recipe instructions, click here.
