Wonderful Winter Greens

In the world of winter greens, kale is king. But, there is an abundance of other leafy veggies that are at their best in the cold weather months such as escarole, Swiss chard, beet greens, sorrel, cabbage, mustard greens, chicory, dandelion greens, Brussels sprouts, collards, cress, spinach, tat soi, and turnip greens to name a handful. Bon Appétit is making the most of one of the more overlooked varieties: cabbage. They have transformed this humble vegetable into a crunchy, satisfying snack food. The cabbage leaves are simply blanched, baked, and seasoned with salt to create a crispy chip that is a refreshing and unexpected change from the norm. What is your favorite winter green?
