The ongoing task of coming up with desserts for Comodo's menu continues. At the restaurant, menu development is always a collaboration, but given my love of sweets, brainstorming sessions go on in my head at all times of day. Yesterday I made an almond-butter cookie that I hope to turn into an ice cream sandwich of sorts. Next up is using already cooked quinoa as a potential flower substitute for cake. Of course, chemistry was never my best subject, so this may very well not work, but I thought I'd give it a try. Maybe add a little almond flour to counter balance the moisture. I have a killer pound-cake recipe that was passed down from my Brazilian grandmother that I love, and am planning on playing around with the recipe this afternoon.
