From a Polish Country House Kitchen

May 6, 2013

If you haven't yet decided on summer travel plans, Anne Applebaum and Danielle Crittenden's recent From a Polish Country House Kitchen: 90 Recipes for the Ultimate Comfort Food just might sway your decision (even if it means never leaving town). Inspired by Applebaum's country estate in northwest Poland, the journalists decided to write a cookbook that looks at the nation's culinary revolution from the perspective of the rural country kitchen. The book is a tantalizing collection of traditional Polish fare (Pierogi, Beet Soup) and recipes with modern origins (like a Foolproof Matzoh Ball recipe adapted from Wolfgang Puck and individual Pavlovas evoking one of the first popular restaurants in Warsaw after the fall of communism). But the overall focus of From a Polish Country House Kitchen is seasonality--for produce, meats, desserts, and spirits. Recipes to try: -Cabbage Rolls with Meat Stuffing and Wild Mushroom Sauce -Hot Mead -Cherry Vodka (Photo of Cabbage Rolls: Bogdan & Dorota Bia?y)
