Inspired by Applebaum's country estate in northwest Poland, the journalists decided to write a cookbook that looks at the nation's culinary revolution from the perspective of the rural country kitchen. The book is a tantalizing collection of traditional Polish fare (Pierogi, Beet Soup) and recipes with modern origins (like a Foolproof Matzoh Ball recipe adapted from Wolfgang Puck and individual Pavlovas evoking one of the first popular restaurants in Warsaw after the fall of communism).
