Chicago Dining: Chef Perry Hendrix's approach to cooking starts with the wine. After studying botany and wine production at Miami University (Ohio), he took to the kitchen and his passion for pairing in apparent in all of the dishes at Custom House.
The menu features a mix of tavern fare and the chef's personal selections, while the beverage program boasts craft brews, artisanal spirits and, of course lots and lots of wines from around the world.
