CUT, one of LA’s best steakhouses is nearing its 20-year mark and is reinventing early dining with the debut of “The First CUT.” Offered Tuesday through Thursday from 5:30 to 6:30 p.m., the three-course experience feels less like a pre-theater menu and more like a distillation of everything CUT does best.
The meal opens with a choice of the restaurant’s signature butter lettuce salad with crisp lightly dressed greens, jumbo lump crabcakes with a basil emulsion or a black truffle endive salad.

Entrées include an expertly cooked, deeply flavorful, Brandt Farms New York strip steak; Snake River Farms Zabuton, dry aged loup de mer and a wild mushroom risotto. Each is delicious and comes with shared sides including tallow-fried French fries, creamed spinach or Yukon potato puree. The kitchen also brought out some delicious Wagyu sliders for us to try.
Dessert closes the experience on a high note with a delicious banana cream pie and Basque cheesecake. Diners also get a glass of wine with dinner.
At $95 per person, “The First CUT” is an accessible luxury in the heart of Beverly Hills at one of LA’s most beautiful hotels..The optional $85 wine pairing underscores the restaurant’s continued focus on a complete, curated experience.
