Why Ibiza Gran Hotel is the Best Underrated Fall Escape

Ibiza Gran Hotel

Long known for its legendary nightlife, Ibiza has evolved into a destination where wellness and indulgence coexist, and barefoot bohemia meets five-star opulence. Come fall, the White Isle offers a slower, more intimate pace with fewer crowds and still splendid weather, inviting travelers to unwind amidst tranquil beaches, explore the historic charm of Dalt Vila’s ancient cobblestone streets, and indulge in some of the Mediterranean’s most innovative cuisine.

At the center of it all is Ibiza Gran Hotel, the island’s original five-star retreat. Over the past year, the hotel has reimagined almost every corner – from its 14,000+ square foot Open Spa to its Michelin-starred restaurant, new bar, and newly redesigned lobby – while maintaining its effortless glamour. Guests can also book one of the island’s most lavish suites, complete with a butler, Bentley transfers, and custom-embroidered pajamas. Here's what not to miss:

New Michelin-Starred Dining Experience: La Gaia by Óscar Molina, the hotel’s Michelin-starred flagship restaurant, debuts a striking new design by Sandra Tarruella Studios featuring organic shapes, vaulted ceilings, and lime-plaster arches alongside a new à la carte offering and Chef Óscar Molina’s inventive tasting menus. A hyperlocal culinary approach draws from Ibiza’s roots while embracing bold, unexpected flavors and global techniques. Dishes like grilled Mediterranean lobster with coral sauce, Balearic pork royale, and black rice with huitlacoche and jalapeño powder reflect a daring evolution of Ibizan flavors with global flair.

New Musa Bar: The hotel’s new lobby bar, Musa, blends art, mixology, and design into a transportive experience. The menu, dreamed up by master mixologist Daniel Martínez and Michelin-starred chef Óscar Molina, includes standouts like the?Modernist?(gin and basil served in a stained-glass vessel) and the smoky, mezcal-forward?Ernest, a slow-burning ode to Hemingway and nocturnal storytelling.

Design Evolution: The hotel’s striking five-story lobby has also undergone a design transformation, featuring ethereal lighting, new Spanish artwork, and sculptural pieces by Mallorcan artist Joan Costa. Next year, guests can expect fully reimagined suites that follow the same Mediterranean-minimal artistic interpretation as the lobby and restaurant.

Art Hotel: Through a new partnership with renowned gallerist Lio Malca, guests enjoy private tours of his nearby Nave de Salinas gallery. The hotel is decorated with over 400 contemporary, exclusive works inspired by the five elements – earth, air, life, water, and sky.
