Evoke is a Traditional Steakhouse "Flipped on its Head"

The newly opened Evoke restaurant at Le Méridien Charlotte, is a conceptual steakhouse that offers diners a new way to experience their old favorites. Focusing on prime-cut and dry-aged steaks, they create seasonal menus that highlight the contemporary spin they put on each plate. Executive Chef Oscar La Fuente and Chef de Cuisine Robert Reinken serve up house specialties like house-made pastas, raw seafood and truffle sides for a culinary experience that is unanticipated.

“We’ve taken the concept of a traditional steakhouse and flipped it on its head,” Executive Chef La Fuente said in a statement. “Guests’ taste buds will experience an unexpected twist on age-old favorites in robust yet shareable plates. We also offer a wide selection of crudos, such as Diver Scallops with orange, shaved fennel, tomato pine nuts and Kalamata olives, as well as Escolar with ruby grapefruit, celery leaves, garlic chips and sel de maldon.”

Aside from one-of-a-kind dishes, restaurant-goers will also find intimate spaces, a mid-century design aesthetic, and a 24-hour curated soundtrack by French Bossa Nova band Nouvelle Vague playing in the background. Evoke is also home to Longitude 80, the hotel’s bar, serving up craft beers, sparking wines and Champagne, and a variety of whiskeys.
