Montreal's New Food Fad: Excellence

Montreal gets serious with its food scene as fad cuisine is entirely forgotten as the city and its chefs focus on what is really important in an excellent dish, and that is excellent quality ingredients. Hopefully this trend catches on more.

What’s delicious in Montreal right now? You might be surprised to hear that no trends dominate. These days, it’s not so much about trends, but about ingredients. Granted, ingredients have long been the focus of every chef’s work, yet sourcing primo ingredients seems to have now usurped trends or showy technique as a cook’s top priority.

 

See that piece of fish draped on your sushi? It was flown in from Japan yesterday. Love that poached egg cradled in your salad? It was laid by a rare-breed hen at an organic farm in the Laurentians.
