In March, renowned chef and restaurateur David Burke is planning to give Aspen’s nightlife scene a boost with Huckleberry Hall — commemorating Colorado’s native huckleberries. The intimate, upscale venue will be opening underneath his new restaurant, David Burke Kitchen, which is found in the resort town’s historic core. The luxe lounge is designed to be a “warm subterranean refuge” with a touch of whimsy, designed in a rustic-meets-industrial style with latticed wood walls, glass lantern pendant lights, and plush upholstered banquettes. Signature cocktails handcrafted from house-made juices, bitters, and syrups (all made with locally sourced spirits and seasonal ingredients) will be on offer, as well as a wide selection of craft beers and wines.

Cocktails being prepped for the opening include the Honey Badger with Spring 44 Honey Vodka, lemon, cinnamon and apple honey syrup, and black pepper; the Rabbit Hunter made with Bulliet Bourbon, fresh mint, lime, and Fever Tree natural ginger beer; and the Tequila Mockingbird with Don Julio Blanco tequila, St. Germain liqueur, grapefruit juice, basil syrup, Aperol, and sugared basil. And of course great food will have a part via a menu of small and shared plates overseen by Executive Chef Matthew O’Neill. Entertainment will be provided by both live acts and a DJ.

“Having spent time in Aspen many times over the past few years, I am always immediately drawn to the landscape every time I touch down,” Burke says. “The town is full of festivities, in such a beautiful setting which I am very excited to be a part of.”
