I was privileged enough to try the Lobel's Natural Prime Dry-Aged Porterhouse, often considered the best cut. A t-bone separates a large strip steak from the filet, making the Porterhouse a perfect blend of lean, mild filet and the rich steak flavor of the strip. In the capable hands of my chef brother, the Porterhouse became a melt-in-your mouth experience after being sous-vide in its own juices and then seasoned lightly and pan-seared. Paired with bordelaise, glazed sugar-snap peas, melted shallot marmalade and bacon-roasted potatoes, the Porterhouse was as exquisite as any I've had in steakhouses around the country.
