'Top Chef' UK at Ellenborough Park

EllenboroughPark’sChef David Kelman recently appeared on Great British Menu, the UK’s version of Top Chef, competing forWales, where he grew up and leads the Olympic Culinary Team. Chef Kelman has won numerous awards, and creates seasonal menus with the freshest farm-to-table ingredients at both of Ellenborough Park’s restaurants, in addition to some times cooking for the queen herself! One item on his fine dining menu and a specialty atEllenboroughPark’s Beaufort Dining Room is the Roast Hereford Cross Beef Fillet. This dish includes braised shin fritter, thyme, garlic butter potato, salt baked young carrot, wild asparagus and a red wine jus.

The perfect pairing to the Roast Hereford Cross Beef Fillet is the rare Château Cheval Blanc, St Emilion 1er Grand Cru Classé A 1989. Chosen byEllenboroughPark’s exceptionally qualified Head Sommolier, Clio Glidici, an awardee of the"Advanced Sommelier" certification from the Court of Master Sommeliers’, this wine shows developed aromas of sweet plum, fig and jammy blackcurrant with some herbs and underwood flavors. On the palate, the wine is light, elegant, with spicy character and a touch of coffee and cigar box.

In both the distinctively fine dining experience of the Beaufort Dining Room and the more relaxed environment of the Brassier at Ellenborough Park, Chef David Kelman has created a menu with British flair, with a selection of dishes which are based on home grown ingredients from the kitchen garden, complemented by locally sourced produce that shows off the best that the Cotswolds region has to offer. To celebrate David’s appearance on Great British Menu and his superstar contribution toEllenboroughParkguests can enjoy 10% off dinner of home grown ingredients and locally sourced Costwold’s produce in The Beaufort Dining Room during May and June.
