Zojirushi's Induction Heating Pressure Rice Cooker Produces Perfect Rice

Just when you thought it was impossible to cook rice perfectly EVERY TIME, Zojirushi steps in and takes care of everything for you. If you aren’t familiar with their high end rice cooker, you should be.

The induction heating pressure rice cooker and warmer is available in two sizes (5.5 cup and 10-cup) and features an LCD control panel with 24-hour clock, timer, recipe booklet, measuring cups, rice spatula and side spatula holder. The technology is far superior with this unit than any other on the market. There are three pressure levels available to get the rice cooked to perfection. What makes this model so unique is that it applies pressure during the cooking process to convert the rigid beta starch into alpha starch, making the rice softer and easier to digest. The cooked rice results in restaurant quality excellence.

Here’s a look at how the cooking process works. Induction heating is an immediate and precise way of cooking. A system of coils in the base of the cooker creates a magnetic field. When the inner cooking pan is placed in this field and the cooking cycle begins, the magnetic field instantly generates the heat inside the inner cooking pan to cook the rice.In the induction heating pressure,Zojirushi's advanced fuzzy logic technology is now paired with Artificial Intelligence (AI), a technological introduction that allows the rice cooker to 'learn' from previous usage to adjust the cooking cycle to generate superior cooking results.  The AI technology addresses seasonal water and room temperature differences to maintain rice texture and consistency.  This is achieved through two embedded thermometers monitoring exterior temperature and inner cooking pan temperature to collect data and aid in the cooking and warming processes.  This applied memory serves the IH Pressure after years of use, never compromising the unit's initial consistency and results.The nonstick coating contains platinum micro-particles in the nonstick coating to further enhance and support a superior cooking result by alkalizing the water upon contact. Alkaline water breaks down protein on the surface of the rice grain, allowing water to more easily penetrate the rice grain.  This enhanced gelatinization releases the sweetness of rice, enhancing the flavor experience.

You can set the unit to cook white rice to regular, firm or soft texture and features other cook settings for umami, mixed, sushi/sweet, porridge, brown,GABA brown, steam-reduce, scorch, rinse-free and quick cooking. There is even a steam reduce setting to decrease steam by up to 50 percent from the regular setting. We love this setting as extra moisture always seems to leave our kitchen cabinets wet (which later cause warping). The result is a firmer texture than the regular setting, which we love (think al dente rice).

If you like crispy rice, there is a scorch setting, which actually toasts the bottom layer of rice as well as a Umami setting, which soaks the rice a bit longer before cooking than in the regular white setting. During this extended soaking time, the sugars in the rice are released into the water. When the cooking process starts, the sugars then reattach themselves to the surface of the rice grain producing a sweet tasting rice.

Health conscious home cooks will love the GABA brown feature, which activates brown rice to lower stress and blood pressure, and improve kidney function. The temperature inside the pan can be maintained at 104°F for up to two hours.  The activation increases the GABA nutrient in the brown rice to 150% over non-activated brown rice.

After serving up the rice, you can keep leftovers warm using the Automatic Keep Warm setting for up to 12 hours. If you are looking to maintain a temperature a longer period of time, the Extended Keep Warm setting keeps the inner pan temperature at a lower temperature and can be used for up to 24 hours.

We have tried using every kind of white rice in the cooker and each time it comes out perfectly. Even better is the unit features a super easy cleanup as the inner cooking pan is nonstick and the inner stainless lid pops off so you can wipe it down.
