A prix-fixe menu is offered in three or four courses, in addition to a chef’s tasting menu. A sampling of beautifully mastered menu items include a Hamchi Tuna Ceviche with Hibiscus Gelee and Compressed Cucumber paired with a 2009 Quatro Mani, Franciacorta Sparkling from Lombardy, Italy; Halibut slowly cooked in Black Olive oil with Thumbelina Carrots and Fingerling Potatoes paired with a 2009 Perrot-Minot, Pinor Noir, Fixin from Burgundy, France.
