Fleming's Steakhouse Chefs of San Diego Offer Helpful Grilling Tips

Tis the season for grilling and who knows how to grill better than the chefs at Fleming's Prime Steakhouse and Wine Bars? From selecting quality products, to seasoning, to grill temperature and cooking the perfect steak and side dishes, Chefs Christopher Gardner and Matt Renstrom have got your summer grilling needs covered. Take a look at their expert tips:

For perfect steak:
  • Use tongs to turn when cooking and never use a fork. "Piercing the meat allows the juices to escape, which is an instant way to dry it out," said Gardner.
  • Learn to Turn. Foods cook fast on a grill, you have to turn them in order to cook them evenly without burning. "Beware when turning," warned Renstrom, "because turning too often will slow the cooking process, leading to food that is tough and dry."
  • Rest Before Serving. Let your food rest for a few minutes before serving to allow the juices to spread evenly. Food will continue to cook after you take it off the heat, so remove it just as it's reaching the doneness you want.

    For grilling seafood:
    "When it comes to cooking seafood on the grill, some simple tools will make it easy to cook your delicate fish without sacrificing it to the coals," said Renstrom.

    His top tools:
  • Plank It. A good cedar plank will add flavor to your fish. It's typically used with salmon.
  • Wrap It. A banana leaf can steam smaller pieces of fish, shrimp or scallops.
  • Basket. A wire basket helps keep a filet or whole fish in one piece without sticking to the grill. Plus, it's easy to turn.

    Don't forget to have fun at your own party!
    "Don't stand sweating over the grill while everyone else has the fun," said Gardner.
    "With a little planning, you can create a great meal with little effort during the party."

    His tips:
  • Keep the menu simple. Include dishes that can be prepared in advance.
  • Be sure your grill is ready. Is it clean? Do you have fuel? Pre-heat it so it's ready to go.
  • Simple doesn't mean boring:
  • Blue Cheese Burgers are easy to make and have an extra kick.
  • Wings can marinate in advance.
  • Grilling fruits for desserts adds a wow factor.

    Don't forget the drinks. Beverages can go beyond the ordinary too. Try sangria. It's easy to make and refreshing.
