El Chaflan

Fresh off a recent refurbishing, El Chaflan frequently tops lists of Madrid's best restaurants due as much to the cuisine as to the new interior. The indoor/outdoor dining room features a real olive tree sprouting from the floor as the centerpiece, and a large glass window for a peek at their exhibition kitchen.

Chef J.P. Felipe has developed his own balanced and original style of Spanish cuisine that smoothly blends the very best produce with the refined know-how and deeply-rooted traditions of the area. He and his staff skillfully combine flavorful herbs, truly fresh greens and vegetables, fish from the coastal waters and beef from the Spanish countryside.
