Richard is renowned for his brilliantly innovative combinations and presentations. After apprenticing at a patisserie in Champagne, the Brittany native opened his own pastry shop in Los Angeles, where he learned to fuse savory French technique with California flair. He opened his first full-service restaurant, named Citrus in 1986 and won acclaim for his display of creativity and masterful technique. He boasts 30 years of experience operating restaurants worldwide, and at the moment owns the series of American restaurants called Citranelle. The establishment has locations in Georgetown, Atlantic City and Las Vegas.
If the seemingly endless success of his restaurants and many years of experience was not enough to convince the Palace that his creation belonged in their menagerie of restaurants, then surely his numerous James Beard Foundation awards caught their attention. In 2007, he was commended as “Outstanding Chef” and his restaurant was awarded the title “Outstanding Wine Service.” Further, in 2008 he received the award for “Best New Restaurant.” Richard is sure to feel right at home at the critically acclaimed New York Palace Hotel.
